The complex, elegant, and even — dare we say it — Burgundian (??) wines of Vitor Claro and Rita Ferreira at Dominó Winery come from a small, old vine vineyard of co-planted varietals in the Portalegre district of Alentejo, which is known for its uniquely cool climate in an otherwise warm region. ‘Salão Frio’ is their first — and, to date, most important — wine. A true pleasure to drink, it pairs well with a remarkable range of flavors, and is blessedly only about 11% alcohol (because just one glass is certainly not enough).ECOLOGY: Sustainable
