‘Origines’ is somewhat of an enigma: deep, dark, and structured, it is also a very “feminine,” elegant wine — ethereal, even — with firm tannins and a persistent, fruity finish amidst delicate floral aromatics and gentle acidity.
In any case, it's an undeniably beautiful wine — one with lots of character and personality, exemplary of the region's terroir, and a wonderful pairing for grilled meats and charcuterie.
WINEMAKING : Maceration for 5 days with spontaneous fermentation via native yeasts; aged for 10 months in stainless steel & ⅓ in 500L oak barrels; minimal intervention & low sulfite
