She picks in two passes — earlier-ripeners (Abouriou, Zinfandel) get a 7–8 day maceration before pressing to neutral barrique; Valdiguié, Carignan, and Colombard follow with a 5-day carbonic, then press and barrel. Blended in late February, bottled unfined and unfiltered with only 20 ppm total sulfur.
