Édouard Lepesme is among a small group of winemakers working to change the public’s perception of the Côtes D’Auxerre (neighbor to the much more famous Chablis region) as a source of only high-yield, inexpensive wines: his entry level Chardonnay — which is decadent yet lean — speaks for itself. Hand-harvested; fermentation in used oak barrels w/ natural yeast; aged 9 months on lees in ½ barrel and ½ stainless steel.
