At 200 meters elevation, their 25-hectare estate sits in one of Languedoc's cooler pockets — Jurassic limestone and clay soils, significant diurnal swings, and enough altitude to slow ripening and preserve acidity. They have farmed organically since 2003 and biodynamically since 2010, inspired by Didier Barral and Olivier Julien. Each parcel is vinified separately; no oenological products are used.\u003c\/p\u003e\u003cp\u003eNicot Rouge is 60% Syrah from the Poujol parcel (silty-clay, north-facing) and 40% Grenache from Saules (clay-limestone, east-facing) — both planted in 1950. Syrah is fully destemmed; Grenache goes in whole bunch. Spontaneous fermentation in concrete, maceration for about a month, no filtration, 2 grams per hectoliter of SO2 at bottling. Production is 5,000 bottles per year.
