Every wine in the portfolio comes from a winemaker rooted in a marginalized community — and the only house rule is low intervention, starting with wild fermentation.\u003c\/p\u003e\n\u003cp\u003eWinemaker Kayleigh Hattingh harvested these old-vine Stellenbosch Cinsault (planted 1991) on February 27, 2023 — ahead of the March rains that would complicate the rest of that vintage — then gave the juice a two-hour maceration before pressing. Spontaneous fermentation in tank, bottled mid-ferment, four and a half months on lees, then disgorged. The result is exactly what méthode ancestrale is supposed to be: a wine that still tastes like fruit.
