PORTUGAL : DOURO : CIMA CORGO
ORGANIC : Touriga Franca, Touriga Nacional, Tinta Roriz, field blend
FULL-BODIED, DARK PLUM, BLACK CHERRY, RIPE BERRY, NEUTRAL OAK
Quinta do Infantado has been bottling estate Port since 1979 — the first producer in the Douro to do so — from exclusively A-grade parcels across 11.5 hectares of steep schist slopes in the Cima Corgo. The Ruby ages in large neutral toneis and balseiros, wooden tanks ranging from 3,000 to 60,000 liters with thick staves that deliberately slow oxidation and preserve primary fruit color and freshness.
Dark, rich, and plummy with excellent balance of fruit, acidity, and tannins without an overwhelming sugary or jammy flavor. The Roseira family's meio-seco house style means 19.5% ABV and 70 g/L residual sugar — roughly 30% drier than standard Ruby Port, with 2-3 years average age across blended vintages. "The best value in the US, or in Portugal for that matter," says Chambers Street Wines.
PAIRINGS :
| Dark chocolate | plum and berry meet cocoa bitterness; the wine's dryness keeps it clean |
| Stilton or Gorgonzola | contrast pairing — sweetness meets pungent blue; classic Porto match |
| Fresh goat cheese | bright acidity cuts through residual sugar; works as aperitif or dessert |
