LIGHT-BODIED, RED CHERRY, CRANBERRY, GRAPEFRUIT, WHITE PEPPER, MINERAL, NEUTRAL OAK70% Pinot Gris, 30% Pinot Noir, and 100% delicious...from Joe Swick (sovereign ruler of natural wine in the Pacific Northwest), ‘P Chill’ is not-quite-red but not-quite-white, summer-y, easy-drinking, and best served very well...chilled. Pinot Noir grapes spend 30 days on the skins as whole cluster; Pinot Gris is direct-press. The wines are fermented separately and aged in a mixture of French neutral oak and stainless steel before blending. Lightly sulfured at bottling; no fining.
