Where most gins steep their botanicals directly in spirit, Bombay Sapphire passes vapour through copper baskets loaded with all ten botanicals — a technique called vapour infusion, run on a pair of 1800s-era Carter Head stills named Thomas and Mary. The vapour strips the volatile oils without cooking them, which is why this gin runs lighter on the juniper than most London Drys and lets the lemon peel, cubeb, and grains of paradise come forward.

Distilled at Laverstoke Mill in Hampshire — the former paper mill that supplied currency paper to the Bank of England — on a base of French wheat spirit. Tastings.com: 93 points.
