Cascade Moon is Nicole Austin's experimental platform at Cascade Hollow Distilling — each release a deliberately unusual corner of their reserves, released on its own terms. The 15 Year is the fourth in the series and the most provocative: a small lot of 15-year-old barrels that aged in single-story rickhouses until the proof dropped below 80, legally pushing this outside the whiskey category entirely.

Entered at 57.5% ABV and run through the Lincoln County Process before barreling, these barrels spent 15 years losing strength rather than gaining it — the cooler, even conditions of Cascade Hollow's single-story rickhouses slowing the evaporation curve. What emerged is rich with caramel, toasted oak, Luxardo cherry, and vanilla; creamy mid-palate, then drying to a sturdy finish. Austin and the team chose not to blend in a higher-proof barrel to clear the 80-proof floor. The label reads "Spirits Distilled from Grain" — a technicality they turned into an argument about what whiskey actually is.

Paste Magazine scored it 8.4/10, calling it "a very pleasant dram to drink" that transitions "from 'quite sweet' to 'pretty dry'" over the course of about 20 seconds.
