COS was founded in 1980 by Giambattista Cilia, Giusto Occhipinti, and Cirino Strano — three friends who harvested their first vintage that October and ended up transforming the face of Sicilian wine. The winery pioneered biodynamic farming and amphora aging on the island, paving the way for a generation of producers. Their Frappato (a native Sicilian varietal sometimes compared to Gamay or Cru Beaujolais) is made from 15-year-old vines on Vittoria's ancient red soils at 230 meters.
Spontaneous fermentation in open concrete tanks, 12–15 days on skins, 8–10 months in concrete before bottling. No fining, minimal sulfites. Serve the Sicilian way, with a slight chill.
