Espolòn is produced at the San Cristóbal distillery (NOM 1440) in the Los Altos highlands of Jalisco, where higher altitude and red clay soils yield blue Weber agave with greater sugar concentration and a more complex flavor profile than valley-grown plants. 100% blue Weber agave is cooked in traditional brick ovens (hornos), fermented with a proprietary yeast strain, and double distilled — first through a continuous column still, then through a stainless-steel pot still — achieving both purity and body.
The Blanco is unaged and bottled immediately after distillation at 80 proof. The nose opens with citrus blossom and white pepper over fresh agave and a hint of herbaceous green. The palate is clean and bright with good mid-palate weight, finishing dry and slightly herbal. Excellent for cocktails or sipping neat.
