At Iron Smoke Distillery in Fairport, NY, the four-grain mash — corn, rye, wheat, and barley — is smoked over applewood before it reaches the mill. Most smoked spirits layer the character on top; here the smoke is built into the ferment itself. The result reads as approachable and sweet first, with the applewood trailing in on the finish rather than announcing itself at the front.

Jim Murray's Whisky Bible scored it 95.5 in 2018 — ahead of Pappy Van Winkle Rye, Blanton's, and Booker's — and Forbes named it one of the ten best bourbons outside Kentucky. Made from locally sourced Finger Lakes grain and spring water at a licensed NYS Farm Distillery.
