Before Jack Daniel’s enters a barrel, it passes through 10 feet of handcrafted sugar maple charcoal — dropped slowly, drip by drip, over three to five days. The Lincoln County Process, as it’s known, is what separates Tennessee Whiskey from bourbon by law and from most of its competitors in character. The charcoal strips out the raw grain edge and replaces it with a smoothness that becomes the whiskey’s defining characteristic.

Founded in Lynchburg in 1866, the distillery is the oldest registered in the United States. It operates in Moore County, which remains dry by local ordinance — the world’s bestselling American whiskey made in a county that can’t legally sell it.
