Lagavulin Distillery sits sheltered in its own bay on the southern coast of Islay, a distillery that has run almost continuously since 1816 — the bay's name, "mill in the hollow" in Scottish Gaelic, has barely changed either. The 16-year-old is distilled in the smallest wash and spirit stills on Islay, run slowly to maximize copper contact and build the dense, rich character that defines the house style. Maturation runs in refill European oak sherry casks, which add depth of dried fruit and dark chocolate without softening the peat.
This is one of the most recognizable single malts in the world: the smoke is authoritative but not blunt, the sherry cask gives it a sweetness that resolves against the sea-salt iodine finish. The 16-year statement is not arbitrary — at 14 years this whisky hasn't settled yet; at 18 it starts to shift. Sixteen is where Lagavulin lands.
