Old Rip Van Winkle is bottled at 107 proof after a decade of aging in new charred oak, near the historic Stitzel-Weller barrel entry proof that defined wheated bourbon for most of the twentieth century. The Van Winkle team hand-selects each barrel, tasting annually to determine which are ready at 10 years and which continue aging toward the 12-, 15-, and 20-year expressions.

Nose of vanilla, caramel, and roasted pecan. Palate of cherry, honey, and soft wheat with a long finish of tobacco, ginger spice, and toasted oak tannins. BTI 95 pts (Exceptional): "a plush, chewy, fruity-yet-dry medium-full body and a long, lingering cherry tobacco, toffee, raisin toast, charcoal, and peppery spice finish."
