123 Organic's “Tres” draws from estate-grown lowland agave in the Tequila Valley — the more vegetal, mineral-forward terroir relative to the Highlands — with 10-year-old blue Weber plants cooked for two days in traditional stone ovens before double distillation in small batches. USDA and EU certified organic, farmed without synthetic inputs, bottled in recycled glass.

The añejo sits 18 months in American white oak — long enough to integrate vanilla, caramel, and spice without burying the roasted agave character.
