Malou Despoux grew up in Languedoc, moved to New York as a teenager, and taught herself to make wine through apprentice harvests in Bordeaux, California, Chile, and the Finger Lakes before launching Accordion Wines out of her garage in Accord, NY in 2021.
Zaza is made from Dechaunac — a French-American hybrid bred for the cold, humid Hudson Valley where Pinot Noir cannot reliably ripen — fermented with native yeast in stainless steel, unfined and unfiltered, nothing added. About 500 cases produced total across all Accordion wines. Chill it 20 minutes before opening.
