Sébastien Chatillon arrived at winemaking the long way around: punk rock bands in Normandy, four years apprenticing at Domaine Mosse in the Loire, seven years as head sommelier at Le Chateaubriand — the Paris restaurant that ranked among the World's 50 Best — before finally landing in Vallabrix in the Gard in 2016 to start Ad Vinum.

Les Arcs is his most pleasurable expression: Merlot and Syrah, organically farmed, whole-cluster vinified and bottled with zero additions — no sulphites, no fining, no filtration. Serve with a slight chill.
