FULL-BODIED, BLACK CHERRY, SMOKE, EUCALYPTUS, NEUTRAL OAK
Bardino in Portuguese means "bohemian" — specifically, someone with a bohemian spirit and a gentle soul, transparent, driven by goodness. João Pires and his partner Maria Soares named their personal project after exactly that quality, replacing the back-label tech specs with a poem and sourcing the grapes from friends they've worked with for over a decade.
A field blend of old vines — 30 to 90 years old — planted between 500 and 650 meters on granitic soils in the Douro. Fermented with native yeasts and aged in used French oak, the 2020 is concentrated and dark from a heat-stressed, low-yield vintage, but the altitude keeps the freshness that makes these old-vine blends worth seeking out. Around 2,600 bottles made.
PAIRINGS :
| Slow-cooked pork shoulder | earthy tannins grip rendered fat; smoke notes echo each other |
| Grilled lamb chops | firm tannins handle the richness; eucalyptus character echoes a herb crust |
| Aged sheep's milk cheese | sharp and salty cuts through the tannin; a classic Iberian pairing |
