Binyamina 'Yogev' Cabernet Sauvignon Petit Verdot 2021 750ml
ISRAEL : GALILEE
CONVENTIONAL : Cabernet Sauvignon, Petit Verdot
FULL-BODIED, CASSIS, BLACK CHERRY, VIOLET, DARK SPICE, NEUTRAL OAK
The Yogev line draws from Binyamina’s best grower relationships — in this case, 80% Cabernet Sauvignon from the Galilee and Golan Heights, 20% Petit Verdot from the Gilboa. It’s a pairing first assembled for the 2006 vintage: Cabernet contributes the backbone and fresh dark-fruit clarity, while Petit Verdot pulls the color deep purple-black and adds a characteristic anise-seasoned depth that the Cab alone wouldn’t deliver.
Grapes arrive at the winery at night — two harvests, two weeks apart — and after cold soaking and fermentation, most goes to stainless. A portion finishes in oak for several months, then the blend is assembled. The producer’s explicit goal is to keep oak in the background, and it shows: this reads as fruit-forward and grape-driven, with enough structure to cellar three to four years or drink now.
PAIRINGS :
| Beef osso bucco with root vegetables | dense tannin and dark fruit match the depth of a long braise |
| Pasta with lamb ragout | the wine’s savory spice edge plays well against lamb’s gaminess |
| Aged Gouda or Emmental | generous dark fruit holds its ground against firm, rich cow’s milk cheeses |
