The Agathodemon comes from Bodega Murga, one of Peru's only natural wine producers, working from the historic Fundo Murga estate in the Pisco Valley — 25 kilometers from the Pacific, wedged between Andean foothills and desert dunes. Mollar and Italia are Creole varieties brought from Spain centuries ago and grown almost exclusively as pisco feedstock ever since. Bodega Murga is among the first to vinify them as still wine.
The method: 31 days of pellicular maceration, co-fermented with native yeasts in concrete eggs, no additions, no filtration, 11% ABV. Pink in color, somewhere between rosé and orange, with a saline coastal lift, lemon-pear fruit, and enough tannic grip to welcome food. Drink it chilled.
