Bordiga has been distilling in Cuneo, at the foot of the Occitan Alps, since 1888. The Pastis Prouvencal is the house's nod to the Alps' other side — Cuneo is 40 miles from Provence, the botanicals are local but the style is unmistakably French. "Prouvencal" is the Occitan spelling; Occitan is still spoken in the valleys between these mountains and the French border.

Best served at 4:1 cold water to spirit — pour the spirit first, then add water slowly and watch the louche form. A drop of grenadine (the classic tomate) or mint syrup (the perroquet) are the Marseille variations. Stands in well for absinthe in cocktails. No artificial coloring.
