FARMING : Sustainable, Organic

WINEMAKING : Natural / Low-intervention: 1-3 day whole-pulp maceration, followed by spontaneous fermentation and one round of racking; plums undergo semi-carbonic maceration in steel tanks, then get blended with the cider before bottling; no fining or filtration.
