Labeled "Vino Espumoso" rather than Cava — a deliberate choice by the Raventos-family-linked project that co-founded the Cava DO in 1972 and resigned from it in 2012 when they felt the appellation had compromised its quality standards. Can Sumoi makes this wine the same way — traditional method, Catalan varieties — but outside the appellation, as a statement.
Fifty-year-old Macabeu and Xarel-lo vines at 400–700 meters on calcareous loam in the mountain zone of Penedes. Nine months on lees in bottle for the brioche and mineral complexity. Extra Brut dosage — very low residual sugar — so the natural acidity and limestone finish dominate. Vinous 91 pts. Imported by Skurnik Wines.
