Estézargues is a cooperative in the southern Gard that takes Cinsault seriously — fifty-year average vine age, no added yeasts, no fining or filtration, settled in tank until spring. The result makes the case for Cinsault as a standalone variety: bright, aromatic, and more structured than the price implies.
