Daniel Szor founded the Cotswolds Distillery in 2014 — the first to distill in the region — building the gin on a botanical load roughly ten times heavier than industry standard. Juniper, coriander, and angelica root macerate overnight; Snowshill lavender, hand-peeled pink grapefruit and lime zest, cardamom, and black pepper go in the morning of the run. Non-chill filtered at 46%, so the oils stay intact — and the gin turns pearlescent the moment ice or tonic hits the glass.
