Le Cince takes its name from the cinciallegre, the small wild songbirds that live among De Fermo's vines — a nod to the biodiversity across the estate's 200 hectares, of which only 17 are planted to vine. Grapes see a longer skin maceration than most Cerasuolo, then age 8–10 months in large old-oak botti rather than the concrete used for De Fermo's other rosato, which is why this one reads deeper and more textured than a typical rosato.
Certified biodynamic, hand-harvested, fermented with native yeast in cement, bottled without fining or filtration.
