Domaine Raimbault-Pineau has been farming Sauvignon Blanc in the Loire for 13 generations, their home in Sury-en-Vaux at the heart of Sancerre country. The Pouilly-Fume grows across the river at Les Moutonneaux -- clay-limestone soils in St. Martin-sur-Nohain that bring texture and regularity alongside the appellation's characteristic mineral tension.
Slow fermentation at 14-16 degrees in stainless steel, then five to six months on fine lees before bottling. No oak at any stage. The result is what Pouilly-Fume is supposed to be: mineral and citrus-forward when young, quince and honey underneath, clean acidity through the finish. Importer AP Wine Imports describes it as "fine, complex wine with notes of mineral, citrus, quince, and honey" -- straightforward and accurate.
