Robert Ampeau is one of Burgundy's quiet legends — a house so indifferent to commercial release schedules that when critics visited the cellar in 2019, they were selling wines from the early 1990s as current releases. This 2003 is among their most recent bottlings, which says everything about their patience.
Les Lavières sits mid-slope in Savigny-lès-Beaune on a limestone hillside — named for the flat pale stones in its subsoil. The 2003 heat-wave vintage was difficult across the Côte de Beaune, but the small surviving crop concentrated beautifully from a disciplined estate. "Savigny-lès-Beaune ages much longer than you might expect for that appellation," wrote Benjamin Lewin MW after visiting Ampeau in 2019. Drink now through 2030.
PAIRINGS :
| Roasted duck breast | earthy depth and dried cherry align naturally with duck's richness; structure cuts the fat |
| Braised lamb with rosemary | firm tannins hold up to slow-braised lamb; earth and game notes pick up the herb |
| Mushroom risotto | forest floor character mirrors umami-rich mushrooms without overwhelming the dish |
