Alella is one of Spain's smallest appellations — a narrow strip of granite hillside north of Barcelona where Mediterranean warmth meets cooling northerly air from the Montseny massif, 1,712 meters inland. That temperature swing preserves aromatics and acidity in a coastal zone that would otherwise produce heavy whites. Pansa Blanca — the Alella name for Xarel·lo — is the appellation's anchor variety: here, on thin sandy-granite soils, it yields lighter, more floral versions than the fuller Penedès style. The 40% Sauvignon Blanc adds citrus lift and a grassy green edge. At 12.5% ABV, it's a wine built for the table.
Elvi Wines was founded in 1996 by Moisés Cohen and Anne Aletá — among the first Sephardic Jewish families to own vineyard land in Spain since the Alhambra Decree of 1492. The name combines the Hebrew El (a name for God) with the Catalan vi (wine); "Herenza" is Spanish for inheritance. All wines are made under OU supervision. This bottling is kosher for Passover and not mevushal.
