Chardonnay in Corbières is unusual — the appellation is overwhelmingly red. Fond Cyprès sources certified organic fruit from a neighboring parcel in Escales, the northernmost corner of the Corbières AOC, where calcareous soil and blue marl sit between two opposing winds: the cold, dry Cers from the northwest and the warm Mediterranean Marin from the east. The result is a Chardonnay without the default oak-and-butter playbook: precise, aromatic, and honest.

Direct-pressed, fermented with indigenous yeasts, bottled unfined and unfiltered with minimal SO₂ — the approach respects what the site gives you and nothing more.
