Forth Vineyards Histoire Cabernet Sauvignon 2018 750ml
Forth Vineyards Histoire Cabernet Sauvignon 2018 750ml
USA : CALIFORNIA : MENDOCINO COUNTY
ORGANIC : Cabernet Sauvignon, Sangiovese, Merlot
MED-BODIED, DARK CHERRY, CASSIS, SUN-WARMED HERBS, CEDAR, OAK
The fruit for “Histoire” comes from the Brown Family Vineyard in Redwood Valley — a small upland Mendocino appellation where a gap in the coastal ridge channels Pacific air into the valley, slowing ripening and building structure. The 2018 vintage delivered small, concentrated clusters with a high skin-to-juice ratio, producing the fine-grained tannins that make this wine worth cellaring.
The blend is 81% Mendocino Cabernet Sauvignon, 9% Sonoma Cabernet Sauvignon, 5% Sangiovese and 5% Merlot — a fussy formula by Forth’s own admission, but one that produces something neither county could achieve on its own. Eighteen months in used American and French oak. 541 cases made.
PAIRINGS :
| Grilled lamb chops with rosemary | structure and dark fruit complement the char; herbal notes echo rosemary |
| Braised short ribs | fine-grained tannins integrate with slow-cooked beef richness |
| Aged cheddar and charcuterie | cassis and cedar bridge naturally to cured meats and sharp cheese |
