FRANCE : LOIRE : SANCERRE
Pinot Noir
LIGHT-BODIED, MORELLO CHERRY, RASPBERRY, VIOLET, WARM SPICE, OAK
Pinot Noir from chalky-clay Sancerre soils — fresher and more Loire-tense than its Burgundian counterpart, with an eight-to-ten year aging arc.
The Bourgeois family has farmed Chavignol since the 1950s, ten generations in. Today the domain works 120 parcels across Sancerre and Pouilly-Fumé, vinifying each separately. The Les Baronnes cuvée spends six to eight months in French-interior oak (Tronçais, Bertranges & Limousin, one-third new), giving structure without masking the appellation's characteristic lift.
PAIRINGS :
| Grilled salmon with beurre blanc | Loire classic — acidity mirrors the sauce, light tannins don't overpower the fish |
| Braised duck leg with cherry reduction | cherry aromatics echo the sauce; tannins hold up to the fat |
| Crottin de Chavignol | the village pairing — same soils, centuries of tradition |
