Inniskillin pioneered the Canadian icewine category — in 1991, their 1989 Vidal Icewine took the Grand Prix d'Honneur at Vinexpo, the wine world's highest international honor. The Riesling expression carries the same principles: grapes harvested in early January at -10°C, the frozen water fraction pressed away so only intensely concentrated juice remains.
Riesling is the ideal icewine grape because its natural acidity survives the freeze intact. At 219 g/L residual sugar and 10.2 g/L total acidity, sugar and acid are in perfect balance — neither dominates, which is why this drinks more focused and structured than most dessert wines at this richness level.
