Bojan and Špela Kobal run their 14-hectare estate in the heart of Haloze — one of Slovenia's most dramatic wine landscapes, with terraced slopes as steep as 45 degrees and marl-rich soils that have supported viticulture since Roman times. The Bajta line (bajta means "cottage" in Slovenian, pronounced bye-tah) is named for the old stone cottage on the estate, once owned by Count Ulm during the Habsburg Monarchy.
This Yellow Muscat pét-nat is made in the ancestral method: hand-picked grapes, native yeast fermentation, bottled before fermentation completes and aged on lees in the bottle. Undisgorged, unclarified, alive. 5,000 bottles per vintage, 12% ABV. Chill it hard — 4 to 6 degrees — and don't shake it before opening.
