La Grange de Quatre Sous sits on a limestone plateau above Assignan in the Languedoc highlands — terroir that qualifies for the Saint-Chinian appellation but is declassified to Vin de Pays d’Oc so Hildegard Horat can blend as she chooses. She planted Malbec here, a grape that thrives in the hot Mediterranean climate, alongside Syrah and Cabernet Franc, and farms the 8-hectare estate organically (Ecocert certified). The result is a wine that carries real structure from the limestone soils and real freshness from the altitude.

Fermented with native yeast in stainless steel, aged 10 months in stainless with no oak. The tannins and complexity come from the terroir and the Malbec — not from the barrel. Dark, inky, and surprisingly refreshing, as Kermit Lynch’s Anthony Lynch put it: “Oddly delicious.”
