From Seb Hardy — six generations of South Australian winemaking — and his wife Colleen, who runs operations across both South Australia and the Finger Lakes. The Cab was destemmed for extraction; the Tannat handled by carbonic maceration to push bright fruit and soften tannins. Aged in a two-year-old puncheon. Concentrated, but with lift.
