Maison Noir 'In Sheep's Clothing' Pinot Grigio 2022 750ml
USA : OREGON : WILLAMETTE VALLEY
SUSTAINABLE : Pinot Grigio
LIGHT-BODIED, GREEN APPLE, MEYER LEMON, PEAR, WET STONE, NO OAK
The name “In Sheep’s Clothing” is a hat tip to Alonzo Harris in Training Day: “to protect the sheep you gotta catch the wolf, and it takes a wolf to catch a wolf.” It reflects André Hueston Mack’s approach — classic Oregon fruit and transparent technique, a wolf in a still white’s clothing.
Maison Noir sources from multiple Willamette Valley vineyards across the Dundee Hills, Eola-Amity Hills, and Yamhill-Carlton AVAs. The 2022 vintage was a return to classic Oregon conditions — a cool spring followed by a warm, dry October that preserved acidity while pushing fruit to full ripeness. Fermentation and aging take place entirely in stainless steel: no oak, no buffer, just clean varietal character.
PAIRINGS :
| Pan-seared trout with herb butter | mineral edge mirrors the fish; acidity cuts through the butter cleanly |
| Summer corn and crab salad | citrus notes and clean finish lift the sweetness without overpowering |
| Roasted chicken with lemon-caper sauce | bright acidity and no tannin let the citrus sauce carry the dish |
