The standing comparison to Muscadet is earned — same role at the table, same nerve and salinity, warmer latitude. Picpoul de Pinet grows on cretaceous limestone a few kilometers from the Bassin de Thau, the saltwater lagoon where France's Bouzigues oysters come from. The proximity explains the saline edge as much as the soil does.
Moulin de Gassac is the Guibert family's second label — same estate behind Mas de Daumas Gassac, one of the Languedoc's landmark producers. The Picpoul fruit comes from partner vineyards near Pinet, farmed sustainably under Terra Vitis certification. Early morning harvest locks in the grape's natural acidity; 4–5 months in stainless on the lees, no oak, no shortcuts. Drink within two years of the vintage.
