Noble Hill sits on the northern granite slopes of the Simonsberg between Paarl and Stellenbosch — organically farmed, minimally intervened, and turning out Bordeaux blends that carry real structure without the weight. The Estate Reserve is 46% Cabernet Sauvignon, 40% Merlot, 7% Cabernet Franc, 7% Petit Verdot. Each variety ferments in tank and completes in 225-liter French oak barrels, with 18 months aging at 10% new wood before the final blend is assembled from free-run juice only.
