Stergios Papras certified his family's vineyards organic in 1990 — the first year such certification existed in Greece. The vines grow on limestone plain below Mount Olympus in Tyrnavos, Thessaly, where mountain breezes descend nightly to preserve acidity in a warm Mediterranean climate.
100% Cabernet Sauvignon, 32 days on the skins, native-yeast fermented, matured 7 months in neutral oak, unfined and unfiltered. At 12% ABV it reads lighter than the variety's California or Bordeaux expressions — more mineral, more food-driven, and built around the mountain terroir rather than extraction.
