Çalkarası is native to the Çal district of Denizli — the name literally means “black of Çal” — and grows nowhere else in the world at meaningful scale. Paşaeli sources from a single old-vine parcel at 899 meters, where calcareous soils and a cool inland climate produce a grape with naturally high acidity and low tannin.
Fermented with native yeasts, then aged eight months on lees in 225-liter French oak barrels — long enough to add texture and roundness, short enough to keep the wood as framework rather than flavor. Serve slightly chilled; this is the rare red that benefits from 10 minutes in the refrigerator before opening.
