Pikasi is the project of Slovenian winemaker Matic Rodica, working with grower Petr Stegovec in the Vipava Valley — a pocket of limestone hills just north of Trieste where continental and Adriatic climates overlap. Rebula spends 72 hours on the skins before heading into neutral oak for eight months, building texture and amber color without losing the grape's innate floral delicacy. Serve slightly chilled.
