Plavina is Dalmatia's most underrated red, overshadowed by the more muscular Plavac Mali and Babić, yet carrying something those grapes can't: freshness and restraint from hillside soils right on the Adriatic. Ivica Piližota has been farming these inland parcels near Šibenik since the family restored the winery in 2002; his Plavina has become one of the definitive examples of the variety in the American market.
Hand-harvested, spontaneously fermented in open vats with twelve days of skin contact, then softened for four months in large neutral Slavonian oak barrels before bottling unfiltered. Vinum USA: “lively acidity, fresh red berries and fruit, lower alcohol that isn't overpowering, a solid tannin structure, with a hint of chocolate and constant undertones of Dalmatian earthiness.”
