Dão sits at 550 meters on Portugal's central granite plateau — more Burgundy than Douro, the wines lean toward restraint and precision rather than weight. João Tavares de Pina farms thirteen hectares at Quinta da Boavista in Penalva do Castelo, a property his family has held since the 17th century.
The 2002 was co-fermented with native yeasts in open-top lagares, held on skins for a week, then aged in stainless steel with extended lees contact before spending three years in old 400-liter French barrels. João held it in cellar until February 2017 — fifteen years after harvest — when he decided it was ready.
