Raventós i Blanc has farmed the same land in Sant Sadurní d'Anoia since 1497, and left the DO Cava in 2012 to create Conca del Riu Anoia — their own estate-only appellation, biodynamic-certified (Demeter 2013), built around four native Catalan varieties. Blanc de Blancs comes from the 40-year-old Vinya del Llac vineyard, spends 18 months on the lees in bottle, and carries a fine, persistent mousse with real mineral precision.
