Feints is a co-fermentation of red and white Italian varieties picked together from Fox Hill Vineyard on the Talmage Bench — a rocky, quartz-studded sandstone site between Hopland and Ukiah that Lowell Stone planted in the late 1980s with obscure Italian grapes, long before anyone was looking for them. All eight varieties go into carbonic maceration together, then foot-trodden and bladder-pressed, five months on lees with no fining, no filtration, and minimal sulfur at bottling.
The carbonic technique produces the wine's signature: low tannin, poppy red fruit, and a herbal-floral lift that makes it drink more like a very serious Beaujolais Nouveau than anything you'd expect from Mendocino. Serve cold. Drink freely.
PAIRINGS :
| Thin-crust pizza or Margherita | tart cherry cuts mozzarella and tomato; the herbal notes echo fresh basil |
| Italian charcuterie and salumi | low tannin and bright acidity pair with cured pork without fighting the fat |
| Grilled sausage with peppers | juicy fruit and herbal carbonic lift complement the pork; serve both slightly cool |
