Bert “Tito” Beveridge founded the first legal distillery in Texas in 1997, building a copper pot still from a photograph and financing the first production run on personal credit cards. The Mockingbird Distillery in Austin now runs 10 stills, but the process is unchanged: 100% corn, distilled six times in copper pot stills, filtered and bottled at 80 proof.

Pot stills are slower and costlier than the column stills used by most vodka producers at this scale — they’re what gives Tito’s its slightly sweet, creamy character. Double Gold, San Francisco World Spirits Competition, 2001. 95 points, Wine Enthusiast.
