Hannah Fuellenkemper finished a law degree in Amsterdam, then walked away from it after a bottle of Ploussard. She apprenticed her way across France, and since 2019 she has bought fruit from friends and made wine in whatever cellar she could find. 2023 was the year that stopped being improvised: a new name, a permanent cellar near Brioude, roughly 10,000 bottles.

The blend is 85% Viognier from Thierry Marne in the Minervois and 15% Cinsault from Gérald Oustric of Le Mazel in the Ardèche. Both were macerated on their skins in whole bunches, the Viognier for seven days and the Cinsault for five, then blended together. That is why a wine built mostly from a white grape pours a dark pink.

No fining, no filtration, no added sulfites, no oak. There is no front label either — she hand-paints the bottles, so no two in a case look alike. Chill it well.
